Then, in the Dumfries and Galloway countryside, he meets a self-taught food pioneer who grows mushrooms that are sought after by Michelin-star chefs worldwide.
Matt meets a family whose generations have been drawn back to Northern Ireland's most northerly tip to spend their days combining a love of native breed horses and of their homeland. Matt also heads to Falkirk to meet the people dedicated to caring for two of Scotland's manmade wonders, the 100-feet-high Kelpies and the Falkirk Wheel - the world's only rotating boat lift.
Matt joins a band of people travelling to Scotland's wild places to preserve the buildings. And finally, Matt weaves his way to Portadown to meet the man whose family founded the nation's oldest carpet company, which today supplies the finest establishments in the world and lays the groundwork for kings and queens.
