Plus, a not-your-typical butcher is bringing even more "meatless" to the Minneapolis masses, puttin' their plant-based stamp on a huli-huli rib panini and the-bomb bacon brat.

Then, a 24-hour vintage diner in downtown Chicago is busier than ever, keeping their loyal patrons and reeling in new ones with lights-out liver and onions, plus scratch-made meatloaf. And a Duluth smokehouse increased their space and menu offerings, plating zesty pepper porchetta and a legit lamb sammie with a curry kick.
